Sunday Meal Plan – Week 8

Happy Sunday, friends!

This might be really weird to say, but I’m really looking forward to the start of the week. Believe it or not, the past month has flown by and our move is only 4 days away, the start of the week means Friday (and our move) is that much closer. I cannot wait!

Our weekend was busy busy busy, all day Saturday was spent back, and thankfully we got a lot done. Most of what is left, is odds and ends, clothes and our food. All stuff that should be fairly easy to throw into boxes Thursday night, or Friday morning. Honestly, I could probably pick 4 outfits out for the week, for myself and Emmett and throw the rest into our suitcases. I can’t wait for this move to be over, I could use a lazy weekend.

Today was spent helping the buyers of our armoire move it to their home, buying an adorable new outfit for Emmett from Carter’s (everything is 50% off right now), going out to lunch (with the money from our sale of the armoire), grocery shopping, visiting with my parents who were in Niagara Falls for the weekend and stopped here for a visit on their way home, making homemade bread and soup, and finally some packing. Yikes! Sounds like a busy day, right!? It was! Though, I don’t mind busy days like this.

The only negative point of this week was my sciatica / back pain / leg pain flared up big time last night. Probably from all the bending up and down yesterday while we packed, but I’m trying to not do anything that puts any unneeded stress on my lower back. I’ve worn my sneakers all day today, which really seems to be helping. I am beyond sick of this pain, it has brought me to tears on many occasions over the last 2 weeks and I am just so angry with myself for letting myself get to this point.

Tuesday: Steak with Chickpea, Tomato and Feta Salad (This recipe was so amazing last week, that we’re making it again this week)

Wednesday: Chicken Tacos w/ Fresh Veggies

Thursday: Scrounge Around House (night before we move)

Friday: Moving day – We will likely have to grab something out since everything will still be in boxes

Saturday: Homemade Gluten-Free Pizza

Looks like a pretty good meal plan to me, let’s get the week started!

Weekend Recap

What a seriously awesome weekend!

Happy Sunday (evening) everyone!

I hope you all had a really great weekend, we sure did. This time of year is always busy because it is full of fun holiday things, but let’s be honest, it sure does feel great when things slow down and you’re able to be a bit of a lounge lizard, right? Let me tell you, there was quite a bit of lounging going on. Woot woot!

Saturday, Emmett was up right around 7 and we enjoyed some morning cuddles before getting up and starting our day. This time together, as a family, is one of my favorites. We’re all still a little sleepy and groggy and content to just lay there cuddling with one another. It doesn’t last long, because as soon as Emmett’s done with his morning milk, he gets impatient and is ready to start his day. We had a yummy breakfast at home and then spent a good long while playing with E’s blocks. He’s obsessed with those things, I’m sure it’s because he can so easily put them together and take them apart. He also is quite fond of helping someone else build their tower higher and higher, and I’m quite fond of watching him play. I love watching him work, I can just imagine what his brain is thinking. 🙂

The rest of the day was spent, with Seamus at the gym, Emmett napping, me doing laundry, a trip to The Cheesecake Factory (free of charge, thanks to gift cards from Seamus’ aunt), and then back home to play with BLOCKS (I told you he was obsessed) and relax!

Sunday started just about the same way as Saturday, but then we all got up and showered and headed out for some yummy brunch, and then grocery shopping. We’ve been going to the Dick Rd. location of Wegmans to avoid some of the city Wegmans congestion. So far it’s been working out great, even with it being a Sunday afternoon, it was NO WHERE near as crowded as the city. We were in and out of there in record speed, and then back home for nap time. Oh! And I found something new, and they are so good — Olivio Sea Salt and Vinegar olives. They’re so delicious, if you like olives.weekend-family-fun-112-3

While Emmett napped, Seamus and I relaxed and caught up on some TV, Dr. Pol in particular. I love this show and if you like animals, then I definitely recommend that you check it out. We had to head back out to Trader Joe’s and BJs, but other than that we spent a lot of the day playing and relaxing. It was fantastic!

Now, it’s time to get all geared up for the week ahead. I’m starting it off with a positive and focused attitude, hoping it carries through until next weekend.

What I Ate Wednesday – #18

Oh yeah! Time again for What I Ate Wednesday!

My day typically starts at 4:45, my alarm goes off and I get right out of bed. I never snooze because that just keeps waking Seamus up (who doesn’t wake up until around 6), and that’s not really fair. He doesn’t need to adopt my lifestyle of getting up super early. Anyway, I always have my coffee set to start brewing at 4:40, so that by the time I’m rolling out of bed, using the bathroom and making Emmett’s sippys for school, it’s done brewing. That first cup tastes like liquid gold!

I won one of those Starbucks reusable mugs from a drawing at work and I’ve been using it at home. I love it because it keeps my coffee pretty warm (but also not scalding) and also is a Starbucks mug (yes, I drank the Kool-aid). I love Starbucks! My coffee of choice is Trader Joe’s Fair Trade French Roast, it is dark and rich and really really good. I recommend adding just a splash of whole milk (thanks Emmett!) or half & half. Yum!

Breakfast was my typical Egg McSeamus, an english muffin, 1 egg and a slice of American cheese. Yum! I also had another delicious cup of coffee when I got settled at my desk. I love coffee!!

Lunch was my usual, delicious salad. Romaine lettuce, topped with blue cheese crumbles, sunflower seeds, Krakus ham and oven roasted turkey and then drizzled with Ken’s Lite Honey Mustard. Mmmmm

Dinner was grilled chicken and sauteed zucchini. Problem was, I rrrrrreally didn’t want grilled chicken so I made myself a chicken sandwich, and voila, dinner was saved for me.

Family Fun Weekend

We had some serious family fun, this weekend!

Fair warning, this will be a picture heavy post. 🙂

Every September, The National Museum of Play (or The Strong), provides free admission to anyone who works at my company. Seamus and I had gone when we were newly dating and it was pretty neat, but obviously since it is very kid-centric we didn’t spend a lot of time playing. Now, 6-ish years later, we went back with Emmett and had SO much fun!

We had been planning this trip for a couple weeks. We knew that admission would be free in September, we had some pretty busy weekends all month long, but were able to keep this (the last weekend of September) free and I’m really glad we did. Our original goal was to leave the house early, go to the museum, then get lunch at Dinosaur BBQ, and end with a trip to Trader Joe’s, but it didn’t quite work out that way.

Once Emmett was awake, we all had some breakfast and caught an episode of Bob the Builder. I did want to get the museum early but I really love our leisurely weekends, since weekdays tend to be such a rush. We sat and cuddled and just enjoyed each other’s company, and a little TV. I eventually got Emmett dressed and I threw on some shlubby (I just made this word up!) clothes and we headed to the farmer’s market for some of the last yummy fruits of the summer. I got some great tomatoes that are just amazing and I want to eat them on EVERYTHING!

Emmett fell asleep on our way home from the market, so I put him down for a nap and then jumped in the shower. Seamus got home from the gym and showered and then we waited for Baby Doodah to wake up, then we almost immediately headed out the door. Since it was already noon, we decided we’d go to lunch first and then to the museum and Trader Joe’s.

This was everyone’s very first time at Dinosaur BBQ, man was it delicious! I had some sort of jerk chicken sandwich, that was out of this world! Seamus had some form of a rack of ribs, I don’t know ribs so I have no idea what size or what cut, but he loved them. We ordered Emmett chicken fingers which might seem like a silly thing to order at a BBQ joint BUT they were hand breaded with their own breadcrumbs, and they were really really good. I, of course, had to try a bite. I’m glad we went with those because we know they’re something he’d eat AND they ended up being delicious!

After lunch it was time for PLAY! Oh my goodness, readers, we had such a blast. From the moment I pulled into the parking of The Strong, I was giddy like a school girl. Ha! There was so much to see, even before you walk in the door. We checked in, got our wristbands and a map and then made a pit stop for a bathroom break and diaper change. The bathrooms are really nice, spacious and both the men’s and women’s have places to change a diaper PLUS they have a family changing area, which is always a bonus. I know to some readers this might seem like a silly thing to mention, but I assure you that for parents (or any adult with a child in diapers), knowing this, is of utmost importance!

Alright, enough about the bathrooms, onto the fun! We first went into the Field of Play. This was pretty neat, they had all sorts of interactive things to do, some were a little above Emmett’s skill set but we still found plenty to do. He opened and closed a bunch of little doors with stuffed animals in them, that were named alliteratively. I don’t think he knew what was in there, other than it was colorful and cute but he had fun opening and closing the doors. There was also an area to race cars and a perspective room. Throughout the entire exhibit there were areas that books sat out that pertained to the activities in the exhibit. I loved this! If Emmett were a little older, and had a higher attention span, we definitely would have utilized this.

We got some pretty cute pictures of Emmett here, unfortunately they didn’t come out great. We just couldn’t get the lighting in the room and our flash figured out.

Our next stop was to the Wegmans kids grocery shopping center. Holy cow, is this AWESOME! It is obviously sponsored by Wegmans, but the whole thing is set up to look exactly like a Wegmans grocery store. They have little baby carts and then they have carts that are slightly taller for the older kids, you walk around and grocery shop. You’re allowed 5 items at a time (because you have to re-shelve them yourself), once you’ve shopped you take them to the check-out and literally scan each item, like you would at the store. They have miniature conveyor belts, a working scanner and some sort of mechanism that collects what you “purchased” and prints out a legit receipt, like you just shopped at a real Wegmans. We didn’t spend a lot of time in this area, because it was mobbed and any time I went to grab something, Emmett would grab and knock everything over. Playing in this area when I was a kid, would have been a dream, I always wanted a cash register. I also didn’t get a lot of pics because Emmett grabbed his cart and was a speed demon, Seamus watched us from outside the store and said seeing him with the cart was adorable. He ran into a few kids, but overall he did pretty well with it.

The newest exhibit at the museum is what they call Little Builders. It had just opened yesterday and once again, it was pretty mobbed. Emmett did a really good job of maneuvering around everyone and finding things to do. There are all sorts of activities where you build things and each station has a different type of block, then you have the hammering station, the crane station and all sorts of other activities. We spent the majority of our time in here because there was just so much to do and Emmett was having a blast. Check him out in the little orange construction vest! Isn’t he THE cutest?

After that we wandered to a few different other areas, nothing really specific and we didn’t even make it upstairs. It was getting late and we still needed to make a quick stop at Trader Joe’s and make it home by 7. On our way out, we swung by the gift shop, this left a lot to be desired. It is full of toys, but very little (like a tiny section) are logo’d items. Seamus and I have a rule, you can get a souvenir when we go on trips like these (as long as we can afford it), but it has to be a logo’d item. The other toys might be fun, but you can likely get them somewhere else for much cheaper, but you can’t get a t-shirt that says Strong Museum of Play. Seamus said this is how his parents did it when he was a kid and I absolutely love it, so we’re stealing and using it! Anyhow, we ended up finding Emmett a cute tie-dye t-shirt (his Aunt Bridget will love it!) and I got myself a nylon draw string bag that I will be able to use on my bike rides.

The final thing we did before we left is find this bench in the gardens. When Seamus and I came here as a new couple we sat a good long while on this bench, and just talked (like you do when you’re new to each other). We took a picture that day (the one that sits on my desk, if you work with me) and we wanted to replicate it today. We got a couple with Emmett and a couple without, such great memories!

We left shortly after that, made the quick drive to Trader Joe’s and then hit the road for Buffalo. Emmett slept the entire way, he was so perfect all day and seemed to really enjoy everything. We will absolutely take him again, as he gets older he will find more and more value out of all the fun things they have to offer.

If you live in Rochester or the surrounding areas, I really recommend that you visit The Strong Museum of Play. It has so much to offer, and I promise that your kids will be exhausted by the time they get home. Emmett was, even after napping the whole way home.

What I Ate Wednesday – #8

Happy What I Ate Wednesday!

Today was Emmett’s second day at his day care and it seems to be going pretty well. When I dropped him off yesterday and set him on the floor, he looked like a little lost puppy. Just staring at me, trying to figure out where he was and who everyone around him was. He had met the teachers before, but it was 2 weeks earlier and in a span of 10 minutes, no way he’d have any recollection of that. I felt terrible leaving him, even though he was fully engulfed in a toy when I walked out. I knew that he would likely be confused later, after he realized I was gone and wonder where his normal teachers were. 🙁

When I picked him up they said he had done alright. He’d whined a little in the beginning but had warmed up as the day went on and they’d even had him sleep in a cot, instead of a crib. What a big boy! I was thrilled to hear that he had done pretty well despite being around new folks.

Today seemed to go even better! He was pretty clingy when I dropped him off and didn’t want to be left, but his teacher distracted him with breakfast and he was fine. Today’s report for the day was that of smiles and happiness, I am thrilled to hear this. I want him to adjust and be happy, that is most important, it is just an added benefit that my ride to and from day care has been chopped in half. Woohoo!

Now onto the food…

Since today was my first Wednesday back in the office since July of 2012 (I had previously been working from home on Wednesdays) my pictures are a little lackluster.

I scarfed down breakfast too quickly to get a picture, but I had a whole wheat English muffin, a slice of cheese and 1 egg. Yummy and very filling! I also had some coffee in my new Starbucks mug, I love it!

My snack was something new and oh so very delicious. I had plain Greek yogurt with a squirt of honey, a handful of blueberries, a half cup of unsweetened coconut and some Bear Naked banana nut granola. Oh my YUM!

Lunch was quick but very good. I had some romaine hearts, unsalted sunflower seeds, blue cheese crumbles, Krakus Ham and a drizzle of Ken’s Light Honey Mustard. Oh! And a hunk of Tuscan garlic bread from Wegmans.

Once again, I completely forgot to snap a pic of dinner. I really apologize, I was not used to having to work so I was thrown off my routine. Either way, I had a delicious burger and some broccoli.

It was a really tasty and reasonably healthy What I Ate Wednesday, I’ll take it!

What I Ate Wednesday – #7

What I Ate Wednesday, week 7!? I can’t believe I’ve been doing this for 7 weeks already.

This Wednesday, is my last Wednesday working from home, regularly. My promotion is showing itself to be one that I need to be in the office 5 days a week for. I’m really sad, not because I don’t like my job or because I resent needing to go in for 5 days but because I love spending time with Emmett, even if he’s on the floor by my feet playing and I’m working. It was a hard decision and one that I did not take lightly, but Emmett deserves to have someone pay direct attention to him, to play with him and I can’t do that when I’m working. I tried to make the most of the day, by getting in a few extra cuddles and having him sit on my lap while I worked through some emails. Next week will be hard, it will be the first week in over a year of life that I will be away from him for 5 days. I really should stop looking at the negative, it’s only making me feel worse.

Onto What I Ate Wednesday!

Breakfast today was so delicious! I had a couple slices of Wegmans 100% Whole Grain bread with First Light Farm and Creamery’s Garlic and Dill Chevre, which was topped with 2 eggs scrambed and a juicy, delicious tomato from this past weekend’s farmer’s market and also a handful of blueberries. I love healthy meals, that are delicious and hit the spot. It helps me realize that you can eat healthy and still enjoy your food.

My snack was some First Light Farm and Creamery (I swear I don’t work them, just love their dairy products) Garlic and Herb Jack cheese and a handful of Keebler Sea Salt and Olive Oil crispbread.

Lunch, oh goodness lunch was so so good! I’ve been stuck on this salad… It includes romaine hearts, fresher farmer’s market tomatoes, blue cheese crumbles, 1 hard boiled egg, an ounce of Krakus Ham, Wegmans sliced chicken and unsalted sunflower seeds. Pure yumminess! I’ve been really into Ken’s light Honey Mustard, it’s very flavorful and tangy so I don’t need a whole lot to beef up the salad. Doesn’t it look amazing? I also had some Polar Seltzer, I gave the ginger lemonade flavor a try based on a friend’s recommendation and I’m glad I did. It tastes a like a mix of 7-UP and ginger ale but without all the added sugars. Mmmm

As always, Seamus made a delicious meal for dinner. We had Buffalo salmon and Israeli couscous, with a few cut up carrots. It was so so good!

When Seamus got home from work, we went to a local gym to sign-up for a family membership, I’m super excited! It will be rare that Seamus and I go together (just based on time constraints) but it’s nice to have us both working out again.

 

Now we’re about to watch some TV and relax! Night!

Wonderful Weekend – Fun as a Toddler

That title says it all, it was an absolutely wonderful weekend!

We didn’t have any major plans this wonderful weekend, but I did knew that I wanted to get Emmett out of the house as much as possible. The warm weekend summers are slowly but surely coming to an end and I want to do as much as possible before the first flakes flies.

Emmett woke up very early on Saturday morning (5 am) and I decided to take full advantage of that. We ate a quick breakfast and then decided to hitch up the bike trailer that my in-laws (THANK YOU!) got Emmett for his birthday. It was so awesome! The trailer is the inStep brand and is just perfect, it has room for 2 kids and little pockets on the side that Emmett can put little toys or snacks in. We put on his little helmet, got him all buckled in and away we went. I think we were riding for about 15 minutes, before I turned around and saw that he was fast asleep. So when people ask me whether I think Emmett had a good time or not, I say, heck yes he had a good time, he was comfortable enough to fall asleep. We ended up riding for 6.5 miles and then heading back home because I wanted to get to the farmer’s market before it got too busy.

We stopped home, used the bathroom and then pulled the jogging stroller out to head to the market. I was concerned that Emmett wouldn’t be very pleased with going from one enclosed buckled in seat to another, but he was just fine, in fact, he seemed really happy. Once we’re at the market, he’s always happy because he has so much to look at. He’s totally like his momma, a people watcher!

The colors of fruit and vegetables at the market were just beautiful. Check out this spread I picked up, tomatoes (so many tomatoes), cucumbers, red onion, zucchini, red potatoes and some Chevre from First Light Farm and Creamery. I barely bought any produce at the actual super market, just some lettuce because they didn’t have much at Bidwell.  That makes me happy because I love supporting local and things that are fresh, never shipped, ALWAYS taste better.

After all that early morning activity, Emmett was really sleepy and I needed a shower so we headed home for both. While he slept I worked on my blog post, 5 tips for New Moms and got that nearly completed so we could have some family fun after Emmett woke up.

We headed out for some ice cream at Anderson’s and then some playground time. We always get Emmett a baby sized dish of vanilla frozen custard and he eats about a quarter of it and then daddy finishes the rest. 🙂 It really hit the spot. We headed over to a nearby playground next and we swung and swung. He loves it! He giggles and smiles the whole time and it just makes me so happy. After awhile there was another baby waiting to get on the swing so we decided to try the slide. Check out this picture, is it not the cutest thing you’ve ever seen?!

Finally, we ended up in a ginormous sandbox, which Emmett loved. We didn’t stay long because we had forgotten sunblock and didn’t want Emmett’s skin to be damaged, but he thoroughly enjoyed himself. He even whined a little bit when we forced him to go, he’s turning into such a little boy, no longer our tiny baby, in fact he turned 13 months on Friday. (OMG!)

Sunday was another early wake-up for Emmett, 5 am again. I normally don’t mind getting up that early but I was really feeling sluggish Sunday morning. Didn’t matter though, we sat down to some breakfast, ate, then I showered and we headed out to the grocery store. I really like taking Emmett to the store, it gets him out of the house and able to experience something new and different each week. Since it wasn’t even 9 am yet, it was pretty quiet at Wegmans and our trip went quickly.

We unloaded and put away the groceries and then it was time to head to Grammy and Grandpy’s house! We were heading down there to celebrate a belated birthday with my dad (it was back on 8/13/13). Nothing special, just some playing, a light lunch and cuddles with Grandpa. We did have some cake but Emmett wasn’t interested, he was having more fun playing with all the new and different toys that live at Grammy’s house.

We headed back to Buffalo around 3:30 and were home in time for dinner as a family. We were all feeling lazy, after a busy weekend so we decided on some pizza… I think that Emmett thoroughly enjoyed himself!

Shortly after that, came bath time and bed. Emmett was going between super cuddly to meltdown mode, when that happens we know it’s nearing bedtime.

We had such an amazing weekend, I didn’t want it to end!
