What I Ate Wednesday – #14

Yay! It’s What I Ate Wednesday!

So how’s everyone’s week going? Has it been as productive as mine? I hope so! I’ve been really good about sticking to this week’s Weekly Wishes. I’ve been doing laundry almost every night, I’ve worked out a couple of times and I’ve started the ‘to-do’ list, I’m feeling good. Much better than last Wednesday.

Let’s see, what’s been going on in the Doodah household? Well, Emmett is definitely getting some new teeth. He’s been grinding like crazy, we try to keep him with a binkie as much as possible because it helps ease his discomfort, sometimes it doesn’t work out, though. There are times when he just doesn’t want it. He’s also been in a pretty good mood, which is always nice. It gives us the opportunity to spend time as a family, and play or cuddle while we talk about our days. As Emmett gets older, realizing how much better he is at communicating is pretty amazing! Not much else to report. We’re always busy but it’s with work and just being a family. 🙂

Alright, now it’s time for What I Ate Wednesday.

Breakfast today, was one of my favorites! I had some 9 grain toast from Wegmans, which was topped with some First Light Farm & Creamery Garlic and Dill Chevre and two over-hard eggs. Om nom nom.

Snack consisted of some Wegmans Greek Yogurt, I love the plain because I’ll mix in unsweetened coconut, Goji berries and granola. I don’t need anything else to sweeten it up, it is music to my mouth.

Oh and I also had an apple!! This one of the ones we picked together as a family. They’re all starting to get a little soft, so we’ll likely head back to the apple farm soon.

what-i-ate-wednesday-1016-2There was a pot luck lunch at work today and I grabbed some of the yummy eats from there. I had a delicious beef stew that was Paleo. It was really good, I’d never had a beef stew that was tomato based but I highly recommend it and will likely be asking Seamus to make one soon. I also grabbed a couple scoops of broccoli salad because I love that stuff. The salad is definitely not healthy but it was so so good!

Since Wednesdays are Seamus’ day off from working out, we tend to spend a lot of time together as a family and make dinner something quick and easy. It’s a nice trade off, in my opinion.

And, how cute is he?

what-i-ate-wednesday-1016-5We got him his own little chair because he’s always trying to climb up on the couch and thought it would be fun for him to have his own thing. He loved it! We ended up going with the Melissa & Doug, Happy Giddy Chair, it is adorable and since it is fold-able, it’s easy to store.

What I Ate Wednesday – #13

Happy What I Ate Wednesday!

It has been an incredibly stressful week so far but I wanted to make sure I linked-up!

First up, breakfast.

Does anyone else do the same exact breakfast every single day? I feel like there’s something wrong with me that I literally eat 1 egg, a slice of Canadian bacon and a slice of American Cheese on a Whole Wheat English muffin everyday. I guess I tend to switch things up on the weekends, but overall it’s the same thing and I’m not sick of it in the least. I guess I just keep doing what I’m doing, huh?what-i-ate-wednesday-109-3

Man do I look forward to snack time!

Today’s snack was a yummy Clif Bar and a cup of coffee. When you were a kid do you remember adults eating cookies with their coffee, or (gasp) even dunking them? My grandma used to do this a lot and I thought it was disgusting. Now, one of my favorite things to do is to have coffee and something sweet. Yum!

I totally had leftovers. Last night we ordered pizza for dinner and it was all I could do to simply put the slices in a bag for lunch today. Like I mentioned earlier, things are really stressful at work and it’s causing me to feel extremely worn out by the time I get home from work, which ends up meaning leftover pizza for lunch. However, I’m definitely NOT complaining! 😉

And finally, dinner.

We marinated some chicken and cooked that on the grill, we had that with some homemade potato pancakes. They were SO good! What can I say? My husband LOVES to cook!

Remember last week when I shared that I’d be joining in with the Spooky Snack & Healthy Halloween Treats, What I Ate Wednesday? Well, instead of sharing pictures of what I’ve made for Halloween, I’ll be sharing links to some of my favorite finds for Halloween treats from around the web. I unfortunately haven’t had any time to make any special treats but I still wanted to join in on the fun.

Emmett loves grapes, so making these grape caterpillars would be so much fun!

Oh my gosh! I wish I was having a Halloween party for kids OR adults. I love the idea of putting plastic spiders in the ice cube trays. It looks so awesome in the drinks!

What I Ate Wednesday – #12

You guessed it, it’s What I Ate Wednesday, time again.

Happy day to you all! Yesterday marked the first day of the ecourse I’m taking, Everyday Happy. I’ll share more about it in a separate post, but I love what the hosts have in store and am really excited to get started on this 6-week journey. Alright, time for What I Ate Wednesday.

My workdays tend to include the same food over and over again. It isn’t that I have a boring pallet, it’s just that it’s easier to pack a lunch when you know exactly what you have to pack and not think through everything. When I get sick of what I’ve currently been eating, and switch things up, I tend to forget some part of my lunch because it’s new and I have a terrible short-term memory. Anyhoo – with all that said, if you notice that some of the foods are repetitive, or seem like they’re from previous weeks, now you know why.

Breakfast was my usual, egg, cheese (American) and Canadian bacon sandwich on a whole grain muffin. I love this because it is just like what I would stop at Tim Horton’s  and order, just a bit healthier. Plus it’s pretty filling, which is always a benefit when it comes to breakfast, since I find I’m most hungry then. As per usual, I forgot to snap a pic before I ate it, sorry! I swear one of these weeks I will manage to get a photo.

Snack was a delicious combination for Trader Joe’s 0% Greek Yogurt, with organic, unsweetened coconut and Goji berries mixed in, and then topped with some granola. I am loving Goji berries right now, I had been seeing a lot of them in people’s Instagram photos so I thought I’d give them a try and I REALLY like them! They add a nice sweet touch and since I use them dried, they’re nice and chewy, which causes me to eat slower and allows my belly to fill up faster.

For lunch I had my typical salad. Romaine lettuce, blue cheese crumbles, sunflower seeds, ham, chicken and honey mustard dressing. See, I told you I eat the same things almost every week! 😀

I ate a little something just before I left work.  I hate when I leave hungry because then I am more apt to stop and get fast food. I had two Wasa Crisps topped with First Light Farm and Creamery Garlic and Dill Chevre (yum!), tomotes and radishes (all from the farmer’s market). This has been my go to snack for the last week, I dare you to give it a try!

Finally, dinner, we just had some pasta and garlic bread. Definitely not the healthiest of meals but it tasted good. I just did some pasta water mixed with olive oil and garlic powder. I’m very particular about my pasta sauces and haven’t found that I love (except for Frank’s), so I tend to gravitate towards white sauces or plain olive oil.

So, that’s it, that was my day of food. Pretty yummy if you ask me!

What I Ate Wednesday – #7

What I Ate Wednesday, week 7!? I can’t believe I’ve been doing this for 7 weeks already.

This Wednesday, is my last Wednesday working from home, regularly. My promotion is showing itself to be one that I need to be in the office 5 days a week for. I’m really sad, not because I don’t like my job or because I resent needing to go in for 5 days but because I love spending time with Emmett, even if he’s on the floor by my feet playing and I’m working. It was a hard decision and one that I did not take lightly, but Emmett deserves to have someone pay direct attention to him, to play with him and I can’t do that when I’m working. I tried to make the most of the day, by getting in a few extra cuddles and having him sit on my lap while I worked through some emails. Next week will be hard, it will be the first week in over a year of life that I will be away from him for 5 days. I really should stop looking at the negative, it’s only making me feel worse.

Onto What I Ate Wednesday!

Breakfast today was so delicious! I had a couple slices of Wegmans 100% Whole Grain bread with First Light Farm and Creamery’s Garlic and Dill Chevre, which was topped with 2 eggs scrambed and a juicy, delicious tomato from this past weekend’s farmer’s market and also a handful of blueberries. I love healthy meals, that are delicious and hit the spot. It helps me realize that you can eat healthy and still enjoy your food.

My snack was some First Light Farm and Creamery (I swear I don’t work them, just love their dairy products) Garlic and Herb Jack cheese and a handful of Keebler Sea Salt and Olive Oil crispbread.

Lunch, oh goodness lunch was so so good! I’ve been stuck on this salad… It includes romaine hearts, fresher farmer’s market tomatoes, blue cheese crumbles, 1 hard boiled egg, an ounce of Krakus Ham, Wegmans sliced chicken and unsalted sunflower seeds. Pure yumminess! I’ve been really into Ken’s light Honey Mustard, it’s very flavorful and tangy so I don’t need a whole lot to beef up the salad. Doesn’t it look amazing? I also had some Polar Seltzer, I gave the ginger lemonade flavor a try based on a friend’s recommendation and I’m glad I did. It tastes a like a mix of 7-UP and ginger ale but without all the added sugars. Mmmm

As always, Seamus made a delicious meal for dinner. We had Buffalo salmon and Israeli couscous, with a few cut up carrots. It was so so good!

When Seamus got home from work, we went to a local gym to sign-up for a family membership, I’m super excited! It will be rare that Seamus and I go together (just based on time constraints) but it’s nice to have us both working out again.

 

Now we’re about to watch some TV and relax! Night!

What I Ate Wednesday – #6

I think I say this every Wednesday, but what a busy day it was! It seemed like I was moving non-stop from the moment I awoke and I have the headache and tense neck/shoulders to prove it.

I actually don’t have a lot of pictures, because I didn’t eat a whole lot. I never thought I’d say this but I was literally too busy to eat at times. Crazy, right!?

Breakfast was the same as last week’s:

2 slices of toast
eggs
avocado
tomatoes (fresh from the farmer’s market, still)
2 plums
a banana

I skipped a snack today, I honestly just didn’t feel hungry and since my mind was busy, I didn’t really think about food.

Huge win!

Lunch was just kind of thrown together at the last minute because I didn’t want to spend a lot of time cooking or making anything. I just had some Keebler Townhouse Flatbread Sea Salt and Olive Oil crackers and a couple hard boiled eggs.

Dinner was out, at Salsaritas. We had an appointment to view a new day care for Emmett and stopped on the way home. It was absolutely delicious, but it always is when we go there.

All in all it was a really good day, busy, but good! I am amazed at how much less food I eat when I keep myself busy. I’m not just allowing myself to sit around thinking about what I can binge on in the kitchen. It feels good to being working on gaining control of my eating.

What I Ate Wednesday #2

Time for my second installment of, What I Ate Wednesday, if you missed last week’s, you can check it out here.

Here’s a quick recap on how What I Ate Wednesday (WIAW) came to be on my blog, one of my favorite blogs, Peas and Crayons does a weekly post all about the food and drinks that she had throughout the day. If you are interested in doing your own “What I Ate Wednesday” post, check out her blog for all the details, everyone is welcome!

Today started out on a rough foot. Emmett decided to wake up at 1 am and refused to go back down until 4 am. Seamus and I took turns caring for him, so we were both pooped but at least I had the luxury of working from home in my PJs and not having to do my hair or make-up. When I’m tried like I was this morning, I tend to crave really decadent foods but in an effort to remain healthy, I made a nice filling meal.

72413-1I had 2 over-easy eggs on Canadian white bread (I know, I know, so NOT healthy but it’s all we had in the house), handful of blueberries, banana and a Laughing Cow Babybel Wheel (Yum!). This kept me seriously full until almost lunch time. OH! And coffee, loads and loads of coffee, I just didn’t snap a picture of it.

I was going to grab a snack but decided I wasn’t quite hungry enough to eat, and after taking one day off from work to celebrate Emmett’s birthday, I was very behind so I skipped the snack and pounded through a few more emails.

Lunch rolled around and I had no desire to actually cook something so I threw a Trader Joe’s Frozen Wild Mushroom and Black Truffle Flatbread Pizza into the oven.

72413It was so so yummy! I love mushrooms so I had no doubt I’d like it but this was awesome. I absolutely recommend it.

My afternoon went by so so quickly but I managed to sneak a yummy snack of celery and First Light Farm and Creamery Chevre, the chipotle and honey flavor.

72413-4Celery is one of those vegetables that I absolutely love but need to eat dunked in something, blue cheese, peanut butter, cream cheese. None of them are very healthy options when eaten in large amounts so I definitely try to keep my potion sizes small.

Dinner was a simple but delicious meal of grilled chicken breast, roasted asparagus and some fresh bread.

72413-6Such a yummy, yummy day! I love doing this post because it helps keep my food on track because I want to report out my healthy meals honestly.

What I Ate Wednesday #1

One of my favorite blogs, Peas and Crayons does a weekly post all about the food and drinks that she had throughout the day. I’ve been meaning to join in on the fun for a few weeks but every time I think to take pictures of my food or make a post, Wednesday has passed. However, I have remembered to write a post this week, I know you’re thrilled. 😉 If you are interested in doing your own “What I Ate Wednesday” post, check out her blog for all the details, everyone is welcome!

Onto my day…

Wednesdays tend to be a bit hectic because I work from home, but this one was even more crazy because we had to follow Seamus to the car dealership so he could take it in to be repaired AND I had to get home to work. Some weeks are better than others, it really depends on Emmett’s mood and whether he’s more or less content to sit and play by himself. This was a good week! He was curious over everything and I was able to give him a toy and he’d sit and examine it while I worked. Some weeks he’s really clingy and I can’t even walk away for a second without him freaking out, those are the weeks that I work with a baby on my lap. I’ll let you in on a little secret, I’m glad this was a good week because I had a lot going on that needed to get done.

First up, our breakfast:

WIAW6I had two hard boiled eggs, some plain yogurt (that was a Farmer’s Market find) and some fresh strawberries.

Let me tell you about this yogurt, it’s amazing! It’s from a local farm called First Light Farm & Creamery  and tastes so yummy. I often get their Chevre but this past weekend the gentlemen selling his wares suggested their plain yogurt, I figured I’d give it a try since I was going to be buying some at Wegmans the next day anyhow. I’m so glad I did, and will likely continue for weeks to come. When the guy from first light was describing the yogurt, he said it was naturally sweet, but I was skeptical. I was thinking, how can plain yogurt be sweet? Well, I don’t have an answer for the how but it is! It is just ever so slightly sweet and pairs perfectly with the fresh fruit I also picked up at the market. Seriously though, if you live in Buffalo go, to the Bidwell Farmer’s Market and get yourself some of this yogurt.

Emmett went down for his usual morning nap and I charged right into my work and got a ton accomplished, but while plowing through I needed a pick me up. I had one of my favorite new(ish) snacks, a green smoothie!

In this afternoon’s smoothie there was a handful (or 2) of baby spinach, a cup of frozen strawberries, a frozen banana, frozen nectarines, a cup of almond milk and a splash of water, just so it was wet enough to blend well.

It was a really productive morning. I love that feeling you get when you accomplish everything you set out to do.

When naptime was over, I went into Emmett’s room to get him and this is what I saw.

Emmett is still nursing, so after he had some milk we sat down to have lunch together. In the future I’ll be sure to get pictures of what he is eating but it was pretty similar to my plate.

Lunch was a Wasa cracker with First Light Farm & Creamery garlic and dill chevre smeared on it, along with a couple more hard boiled eggs, yes I had four hard boiled eggs today, but when you’re busy you’ll grab whatever you can out of the fridge that is healthy and filling. I also had some delicious watermelon, that had the perfect flavor.

Emmett was still in a great mood, so he played and I got more work done and before we knew it, it was time to go pick up Seamus and take him to get his car. Car repairs suck and are so expensive, but at least we know he’s safe.

Once home again, Seamus made dinner while Emmett played and I tried to get a bit more work done. I know I mentioned before that Emmett was in a great mood, but here’s proof.

WIAW-7He was so content to just hang out near me and play. I love when he’s like this because I know he’s confident enough to be independent and play but also that he loves me and wants to be near because there are a million other places he could play, but he chose one nearest me.

Dinner tonight was a Polish feast (alright, not really a feast but it was Polish food). We had Polish sausage and pierogis from Redlinski’s. Seamus did an awesome job throwing it together and it was delicious but sadly I devoured it before I could get a picture, sorry.

Phew! What a busy day, but a really good one too.
