Sunday Meal Plan – Week #23

What an awesome Sunday we had!!

We’ve had an exciting several days! My sister and her family are in town visiting and since I had off at the same time we’ve spent a lot of time together, allowing our children to play and have a good time.

Friday we went to Midway Park in Beamus Point, NY. I’m really glad we did too, it’s a really small park, perfect for 2 year olds and with very few people there. The kiddos were pretty much allowed to run from ride to ride with us following behind. They had such a good time and used up a TON of energy. I’m not much of a ride person, I prefer to people watch so I wasn’t sure what to expect with Emmett. He LOVES rides! Ones that spin, especially! Thanks to my sister and brother-in-law for taking Emmett on several rides that I wouldn’t do (me and spinning just do not mix).

Then on Saturday we celebrated my mom’s retirement and Emmett’s birthday. My siblings and I got together and hired a photographer to come to my mom’s house to take family photos of all of us. We hired J. Lee Photography and she was awesome to work with! She arrived promptly and never rushed us. She was open to us taking as many different poses as we wanted and was eternally patient!! If you’re looking for someone in the Dunkirk/Fredonia/Buffalo area who is affordable, I highly recommend her. As soon as we get our prints, I’ll be sharing with you.

Since the photo shoot was late, Emmett and I stayed the night in Dunkirk. Emmett was excited to wake up and know he got to see his grandma again and play with his cousin. He really had such a blast with her! Once we got back home Emmett and daddy did some cuddling, we had some lunch and then it was nap time for Emmett and I. You never sleep quite as well at someone else’s house, as you do at your own. After he woke up we grabbed some iced coffee, went to the playground, picked up pizza for dinner and then spent the evening playing together. This is what Sundays were made for!

This will be another exciting week for Emmett! It’s his birthday week! Tuesday I’ll be taking him to the Chautauqua county fair with his cousin, then Wednesday we’ll be going to the zoo and out for Linner (lunch + dinner). I am loving this time with him!!!

Monday: Marinated Chicken and Zucchini

Tuesday: Dinner at the fair (yum!!)

Wednesday: Linner out for Emmett’s birthday

Thursday: (back to work) Hot Dogs and Oven Fries

Friday: Teriyaki Pork Loin & Cauliflower

Saturday:  Fish Tacos & Fresh Veggies

It’ll be a pretty easy week cooking wise, but we need to get back in the habit of shopping and cooking after a week off. I love vacation, but MAN it does a number on the waistline! 🙂

Sunday Meal Plan – Week 17

Happy HAPPY Sunday to YOU!

Man! It has been an amazing weekend, full of LOADS of outdoor activities and we still have another day left. The weather in WNY has been mind-blowing! I know we’ve had quite a bit of rain AND some cooler days, but honestly, I’ll take all that if we keep having weekends like we’ve had over the past several weeks. Warm, and sun that doesn’t seem to end! Just plain lovely! 🙂

Yesterday, we went out to the playground early. Emmett had a blast swinging, sliding and playing on the little plastic cars they had sitting out. And because he was well rested, he was listening very well too. (Always awesome!) He’d start riding too far away, I’d ask him to turn around and he would. It made me feel so good, knowing he’s such a good listener (so long as he isn’t tired or cranky).

The rest of the day was spent with a big nap (for everyone), then we ran some errands, grabbed a quick dinner at The Corner Bakery, and then home to start watching How to Train Your Dragon. Emmett was loving it! He kept saying, “Oh no!” or cheering, it was very adorable.

Today, I met up with a good friend and we went for a nice long walk. It felt amazing! Emmett got a little feisty, being trapped in the stroller for that long, but eventually he gave up and fell asleep. We walked about 6 miles, and other than some friction from crappy sneakers, I felt good. No pain! I need to keep this body active, so that I continue to keep the herniated disc pain at bay.

My little cutie is sleeping now, but once he’s up, we’re headed to a playground, while Seamus runs and then will eventually head home for dinner (Teriyaki Salmon, YUM!).

Tomorrow will be another great day!! We’re headed down to visit my parents, for a small picnic. Emmett’s been asking to see grandma and grandpa, so we’re finally obliging him. I love visiting my parents because their yard is so big, and very private – Emmett will be able to run and get all his energy out. 🙂

Monday: Hamburgers/Hot Dogs on the grill at my parent’s house

Tuesday: Tacos with this guacamole recipe. (yum!)

I’m excited for this week! It’s shaping up to be a beautiful one weather-wise, and I cannot wait to get Emmett out as much as possible, so that he can enjoy it!

Sunday Meal Plan – Week 15 – Mother’s Day Edition

Happy Mother’s Day to all the moms, grandmas, and aunts out there!

Can you believe it’s mother’s day already? I swear we just rang in the new year! I know it’s so cliche to talk about the passage of time and how fast or slow it goes, but seriously, May? Already!?

We’re finally getting some phenomenal weather here in WNY, which makes me a happier person, plus it gives us the opportunity to get out and play, or RUN, which has become Emmett’s favorite. 🙂 He must get that from his dad, because even when I’m in shape to run, it’s never my favorite workout, whereas Seamus truly enjoys running, AND looks forward to it.

Alright, so you’re probably checking in to see what we have on the menu for this week. We had a few carry-overs (again) because we just didn’t feel like cooking one day so we ordered pizza, and then on Friday my mom and sister came up for Mother’s Day tea at Emmett’s day care, so we all ordered in.

So let me stop babbling and get to the menu…

Sunday: Hot Dogs (on the grill) & fries (one of my fave meals, for my special mother’s day)

Monday: Marinated Chicken & Zucchini

Tuesday: BBQ Pork Loin & Baked Potatoes

Wednesday: Spaghetti (with GF noodles – it’s our first time trying them, so I’ll let you know how they go) & Meatballs

Thursday: Homemade Pizza (carry-over)

Friday: Salmon Teriyaki & Asparagus (carry-over)

Saturday: Steak, with Chickpea & Tomato salad (again, I CANNOT get enough)

Seamus and I had a pretty easy time pulling our menu together this week, and we shopped on Saturday so that we didn’t have to worry about it on Sunday (because it’s Mother’s Day and I’m hoping to get spoiled). 😉 And the added bonus is that it’s a menu I’m pretty excited for! Woohoo!

Sunday Meal Plan – Week 10

Hey everyone! Happy Sunday! It’s time to share my Sunday Meal Plan with you.

I wish I was in better spirits, because I really do enjoy linking up my meal plan, but we’ve had a rough week, and an especially rough weekend. You’re probably wondering what’s going on, or maybe you’re not, either way I’m going to share.

Over the last week, the tenants below us have had the volume on their TV / stereo up very high. The bass is completely audible through the floors and is quite disturbing when we’re trying to watch TV, or focus on something else. We tried to work with them, asking them on 2 separate occasions if they minded turning down the bass. We have absolutely no issue with talking, or other ambient noise that is caused by living above someone. After dealing with the noise for an additional few days, we reached out to our landlord, who was absolutely no help, and quite honestly made us feel much worse about the situation.

We texted back and forth with her on Thursday evening (she requested that we text). She said she’d contact them, and I’m certain she did. However, the music continued to be loud all night, and then again Friday night it was bad. I went to bed at 8:30 because I just couldn’t handle the noise. Seamus texted the landlord again, asking that she contact us at her earliest convenience. She called the next morning (Saturday), and upon our complaints of the noise, said that she was not their mother and had no control over the volume of their music or what they did. Also, going on to say that they deserve to have people over and live. I agree. We’re not asking them to not live or not have people over, we’re asking for them to turn their bass down.

We explained all this to her, but she didn’t want to hear it and began repeating the same things over and over again, about their right to live. Her only suggestion was to call the police, which we really didn’t want to do. We really would rather just handle things peacefully, so we’re thinking that we may write them a letter explaining that we don’t want a feud and that we have no issue with the actual music or their gatherings, simply their bass. Our hope is that by putting it all out there, they will want to be respectful of us, as we want to be of them. I’ll keep you posted, but this has really put our whole exciting move in a really crudy spot.

Oh! And I did manage to find my menu planners, so I’m back to writing everything out, and it was so much easier to make our meal plan and shopping list this week. Woohoo!!

Sunday Meal Plan – Week 8

Happy Sunday, friends!

This might be really weird to say, but I’m really looking forward to the start of the week. Believe it or not, the past month has flown by and our move is only 4 days away, the start of the week means Friday (and our move) is that much closer. I cannot wait!

Our weekend was busy busy busy, all day Saturday was spent back, and thankfully we got a lot done. Most of what is left, is odds and ends, clothes and our food. All stuff that should be fairly easy to throw into boxes Thursday night, or Friday morning. Honestly, I could probably pick 4 outfits out for the week, for myself and Emmett and throw the rest into our suitcases. I can’t wait for this move to be over, I could use a lazy weekend.

Today was spent helping the buyers of our armoire move it to their home, buying an adorable new outfit for Emmett from Carter’s (everything is 50% off right now), going out to lunch (with the money from our sale of the armoire), grocery shopping, visiting with my parents who were in Niagara Falls for the weekend and stopped here for a visit on their way home, making homemade bread and soup, and finally some packing. Yikes! Sounds like a busy day, right!? It was! Though, I don’t mind busy days like this.

The only negative point of this week was my sciatica / back pain / leg pain flared up big time last night. Probably from all the bending up and down yesterday while we packed, but I’m trying to not do anything that puts any unneeded stress on my lower back. I’ve worn my sneakers all day today, which really seems to be helping. I am beyond sick of this pain, it has brought me to tears on many occasions over the last 2 weeks and I am just so angry with myself for letting myself get to this point.

Sunday: Wegmans Kale & Mushroom Soup, Homemade gluten-free bread

Monday: Burgers on the grill & fries

Tuesday: Steak with Chickpea, Tomato and Feta Salad (This recipe was so amazing last week, that we’re making it again this week)

Wednesday: Chicken Tacos w/ Fresh Veggies

Thursday: Scrounge Around House (night before we move)

Friday: Moving day – We will likely have to grab something out since everything will still be in boxes

Saturday: Homemade Gluten-Free Pizza

Looks like a pretty good meal plan to me, let’s get the week started!
