What I Ate Wednesday – #7

What I Ate Wednesday, week 7!? I can’t believe I’ve been doing this for 7 weeks already.

This Wednesday, is my last Wednesday working from home, regularly. My promotion is showing itself to be one that I need to be in the office 5 days a week for. I’m really sad, not because I don’t like my job or because I resent needing to go in for 5 days but because I love spending time with Emmett, even if he’s on the floor by my feet playing and I’m working. It was a hard decision and one that I did not take lightly, but Emmett deserves to have someone pay direct attention to him, to play with him and I can’t do that when I’m working. I tried to make the most of the day, by getting in a few extra cuddles and having him sit on my lap while I worked through some emails. Next week will be hard, it will be the first week in over a year of life that I will be away from him for 5 days. I really should stop looking at the negative, it’s only making me feel worse.

Onto What I Ate Wednesday!

Breakfast today was so delicious! I had a couple slices of Wegmans 100% Whole Grain bread with First Light Farm and Creamery’s Garlic and Dill Chevre, which was topped with 2 eggs scrambed and a juicy, delicious tomato from this past weekend’s farmer’s market and also a handful of blueberries. I love healthy meals, that are delicious and hit the spot. It helps me realize that you can eat healthy and still enjoy your food.

My snack was some First Light Farm and Creamery (I swear I don’t work them, just love their dairy products) Garlic and Herb Jack cheese and a handful of Keebler Sea Salt and Olive Oil crispbread.

Lunch, oh goodness lunch was so so good! I’ve been stuck on this salad… It includes romaine hearts, fresher farmer’s market tomatoes, blue cheese crumbles, 1 hard boiled egg, an ounce of Krakus Ham, Wegmans sliced chicken and unsalted sunflower seeds. Pure yumminess! I’ve been really into Ken’s light Honey Mustard, it’s very flavorful and tangy so I don’t need a whole lot to beef up the salad. Doesn’t it look amazing? I also had some Polar Seltzer, I gave the ginger lemonade flavor a try based on a friend’s recommendation and I’m glad I did. It tastes a like a mix of 7-UP and ginger ale but without all the added sugars. Mmmm

As always, Seamus made a delicious meal for dinner. We had Buffalo salmon and Israeli couscous, with a few cut up carrots. It was so so good!

When Seamus got home from work, we went to a local gym to sign-up for a family membership, I’m super excited! It will be rare that Seamus and I go together (just based on time constraints) but it’s nice to have us both working out again.

 

Now we’re about to watch some TV and relax! Night!

What I Ate Wednesday – #3

Has it really already been 3 weeks!? Time is moving WAY too quickly, it can slow down any moment now. Thanks.

Anyway, back to the regularly scheduled What I Ate Wednesday!

Emmett and I got up and started eating early today, well earlier than we usually do on a Wednesday. Since I don’t need to shower before I start working, I’ll typically get our breakfasts ready and sit down to my work computer and get some stuff done while we eat. Today’s breakfast for me, was rolled oats, with First Light Farm and Creamery (I swear I have no affiliation with them, I just seriously love their stuff) plain yogurt, strawberries, blueberries and cinnamon.

what-i-ate-wednesday-3 what-i-ate-wednesday-4It was just alright. I love oatmeal and I love this yogurt but together they didn’t go so well. Maybe if I had added some honey or cinnamon directly to the oatmeal, instead of just sprinkled on top, it would have made a difference. Either way, it was so filling!

For the remainder of the day, until dinner, I just did snacks. I wasn’t in the mood for a big, heavy or warm meals. My first snack was the rest of my Wegmans guacamole and some Trader Joe’s cut organic carrots.

what-i-ate-wednesday-2That stuff is seriously good! I’ve been eating it on top of my salad in place of salad dressing and it’s been hitting the spot. If you live near a Wegmans and haven’t tried their guac, I highly recommend that you do!

Oh and with that, I also had a cup of coffee. I know that sounds disgusting but I didn’t have them together, it was one right after the other, so completely NOT disgusting

My next snack happened to occur right around lunch time, so I got Emmett’s meal together and then mine and we sat down with the grub. I had blueberry and cinnamon goats cheese with some Wasa crackers and a delicious locally grown peach. Mmmm

Dinner was nothing fancy, typically week night dinners aren’t. Evenings are just such a whirlwind of spending time with Emmett, making dinner, doing laundry, eating dinner, bath and finally bed, so we try and keep it on the easy side. Tonight’s meal consisted of a Trader Joe’s chicken burger on a mini-Kaiser bun, french fries and some blueberries (not pictured).

Munchkin Meals #1

Since I’m not the only one who eats in my house, I thought I’d start a new series, titled Munchkin Meals. I got this idea from another of my favorite blogs, A Health Slice of Life, she blogs about all the different Munchkin Meals she serves her daughter, check it out.

Emmett loves eating and on most days will eat anything we give him, it might take him awhile to get to everything, but he’ll try it at least once. I truly believe that we did so much good by having him follow the Baby Led Weaning approach.

He has had a banana for almost every breakfast since he’s started eating solid food and he just doesn’t get sick of it. He takes after me, I love, bananas and eat one almost every morning too.

Munchkin-Meals-Yogurt Munchkin-Meals-sandwich Munchkin-Meals-plumsLunch consisted of, a sunflower butter and jelly sandwich, plums, blueberries and yogurt. I kind of overdid it with this Munchkin Meal, I made way too much. Sometimes I get carried away, trying to be creative and including every possible healthy food item, that I make too much. The beauty is that Emmett just stops eating when he’s full, so even if I make too much he never stuffs himself. I love this since it’s something I struggle with often.

And I have to rave about the jelly on the sandwich, my mother-in-law makes it by hand and it is just so so delicious! This particular one is Strawberry, but we’ve had mixed berry and apricot too and all were equally yummy, plus Emmett loves it.

What I Ate Wednesday #2

Time for my second installment of, What I Ate Wednesday, if you missed last week’s, you can check it out here.

Here’s a quick recap on how What I Ate Wednesday (WIAW) came to be on my blog, one of my favorite blogs, Peas and Crayons does a weekly post all about the food and drinks that she had throughout the day. If you are interested in doing your own “What I Ate Wednesday” post, check out her blog for all the details, everyone is welcome!

Today started out on a rough foot. Emmett decided to wake up at 1 am and refused to go back down until 4 am. Seamus and I took turns caring for him, so we were both pooped but at least I had the luxury of working from home in my PJs and not having to do my hair or make-up. When I’m tried like I was this morning, I tend to crave really decadent foods but in an effort to remain healthy, I made a nice filling meal.

72413-1I had 2 over-easy eggs on Canadian white bread (I know, I know, so NOT healthy but it’s all we had in the house), handful of blueberries, banana and a Laughing Cow Babybel Wheel (Yum!). This kept me seriously full until almost lunch time. OH! And coffee, loads and loads of coffee, I just didn’t snap a picture of it.

I was going to grab a snack but decided I wasn’t quite hungry enough to eat, and after taking one day off from work to celebrate Emmett’s birthday, I was very behind so I skipped the snack and pounded through a few more emails.

Lunch rolled around and I had no desire to actually cook something so I threw a Trader Joe’s Frozen Wild Mushroom and Black Truffle Flatbread Pizza into the oven.

72413It was so so yummy! I love mushrooms so I had no doubt I’d like it but this was awesome. I absolutely recommend it.

My afternoon went by so so quickly but I managed to sneak a yummy snack of celery and First Light Farm and Creamery Chevre, the chipotle and honey flavor.

72413-4Celery is one of those vegetables that I absolutely love but need to eat dunked in something, blue cheese, peanut butter, cream cheese. None of them are very healthy options when eaten in large amounts so I definitely try to keep my potion sizes small.

Dinner was a simple but delicious meal of grilled chicken breast, roasted asparagus and some fresh bread.

72413-6Such a yummy, yummy day! I love doing this post because it helps keep my food on track because I want to report out my healthy meals honestly.

30 Day Vegan Challenge – Week 4

This a week late, I apologize! There’s just a million things going on and that I want to write about, trying to get through them all leads to some articles being delayed.

As you can probably tell from my most recent food posts, I’ve gone back to my old way of eating. Well, that’s not technically true, I’m aiming to eat less meat and dairy and stick to a cleaner (that is fewer processed foods) diet, but I have added some meat, dairy and definitely eggs back in.

You’re probably wondering if I feel any different or if it made me feel better or worse, right? If I’m being honest, when I stuck to the vegan diet religiously without any slip-ups, I felt really great. I could tell my blood pressure was normal (lack of a racing heart when I’d get stressed) and any excess water weight I’d been carrying around had disappeared. My clothes fit better, my rings circled around (I love when this happens) and overall, I felt really positive.

My guess is that you’re probably wondering why I decided to stop eating vegan and go back to regular eating if I’m talking about all those positives. That’s simple, I felt myself starting to slip. Towards the end all I could think about eating was an egg with a runny yolk being soaked up by bread. When I start getting consumed by those thoughts, I know I’m losing control and in order to maintain a healthy(ish) diet, I need to add those foods that I’m craving back in, just in moderation.

Do I feel like I gave my all to this challenge? In a word, no. I definitely did not give this challenge my all, my husband can testify to that. I complained constantly about not being able to have the delicious smelling chicken he had made for him and Emmett or about how I was getting bored of beans (though, I love beans and could eat them everyday). So all I could think about for pretty much the last 2 weeks was being done, and resuming my regularly scheduled diet and that’s not really fair to the challenge. The issue wasn’t with the challenge itself but with my inability to stick with anything.

I want to try again, but I want to take a different approach this time. Cutting these items out cold turkey may work for some and maybe even the majority but I don’t succeed that way. I’m currently in the midst of reading Vegan Before 6, by Mark Bittman. From what I’ve read so far, the concept is pretty simple, you follow a whole foods plant based diet until 6 pm, and then for dinner you enjoy whatever kinds of foods you want. Just a side note, the time 6 is just a number, basically you follow a vegan diet until your dinner and then eat whatever you want. I will do a full review of the book once I’ve completed it and have put the diet into practice for a few weeks. While following VB6 (as it is often referred to), I won’t put a time limit on it. If I follow it and love it, then I’ll just keep on going. By putting the 30 days on something, I am telling myself that I can quit in that time-frame rather than sticking with it until it either becomes habit or doesn’t work any longer.

Do I recommend the 30 Day Vegan Challenge? Absolutely! I learned a heck of a lot through the entire month and I also experimented with different foods that I previously would have never tried. If you do well with cutting foods out cold turkey, then this will absolutely work for you and I 100% endorse the challenge and you giving it a try.

I wish I had a more positive final post for this challenge, but I’m working on it and little by little I will get to where I want to be. I’m just still finding my path.

30 Day Vegan Challenge – Week 2

(This is almost a week late, life has been crazy!)

I’ve made it through the second week of vegan eating!

I’ve definitely had my ups and downs with my menu but overall the transition hasn’t been that difficult. Admittedly, I’ve slipped a couple times and had eggs, dairy and meat, but the large majority of my meals were completely vegan.

My biggest challenge has not been finding vegan foods that I enjoy; the biggest hurdle has been fighting the cravings. I (sadly) love junk food, chips, cookies, fast food, pizza, you name it, it has been part of my diet. Every time I get in my car, I have to fight the desire to stop and fill myself up with that junk. I know that might seem silly to some, you’re thinking, make the decision skip to unhealthy foods and stick to that decision, but for some reason my brain doesn’t work that way. It is a constant struggle.

I want to conquer this, which is part of why I started the challenge. I’ve tried a million different methods and still I struggle. I don’t blame those other programs, the problem absolutely lies within me but I can’t seem to conquer my junk food fetish, while still eating it. Because of that I decided that cutting it out completely was the best decision.

Honestly, it has been going pretty well. Within the first week, I lost a ton of weight, my pants were fitting better and my rings were swirling around my finger again. It was likely all water weight, but it felt good to feel more comfortable in my skin. Then mid-way through the second week, the cravings were hitting me hard and I hit a bump and stumbled a bit. I didn’t let it stop me though, I got right back on track and am proud to admit that I am still following the vegan challenge.

I’m considering expanding the challenge a few days, for each of the days that I ate “off plan.” At this point it would an additional 4 days, tacked onto the end. I see no reason not to, so right here and now I am making the decision to continue on after the original 30. The original 30 would have ended on July 9th, but that instead will be expanded to July 13th.

You’re probably wondering how I’ve been feeling, whether I have felt more energy or if my mood has changed. I am more than happy to report that when I follow a vegan diet very strictly, I feel so much more energy. I don’t feel like I’m crashing mid-day or like my blood sugar is going haywire, I feel good! At this point, I don’t know whether that’s because of the vegan diet or just eating healthier, but either way, I am enjoying the additional bursts of energy.

Baby Led Weaning

When you become a mom you are faced with all sorts of decisions and one of the biggest ones is how you begin feeding your baby solid foods. I had never given much thought to how I would feed Emmett; I just assumed I’d give him a pureed form of food, until I came across “The Art of Making a Baby” and the author’s post about the book titled Baby Led Weaning.

I will get into the details of how it worked for us in a later post but right now I want to do a quick review of the book for any parents who are looking for a new, non-traditional way of feeding their baby.

Overall I thought the book was a quick and easy read, one I’m glad I spent time on. It probably took me a cumulative amount of 3 days, to get through the entire thing but after I finished I went back through and re-read some parts that I had highlighted or starred. I wanted to be sure I fully absorbed everything involved with feeding Emmett this way. Clearly it is a new idea and I wanted to be fully educated so that I could pass that knowledge along to my husband as well as Emmett’s day care teachers or anyone else who might feed him.

I absolutely recommend taking the time to read through the preface and introduction because the authors provide you with some fantastic background information that is not wise to skip. They stress how important it is to allow your baby to make the decision on when is right for him to begin solids. They state it is important to wait until the child is at least 6 months old but even at that time, if you place food in front of the baby, and they show no interest in it that you should not force it upon them. A baby should be getting almost all of their calories and nutrients from breastmilk or formula until nearly 9 months old, so there is no rush!

One of the most beautiful things about BLW is that there is no reason to make baby a special meal, they can and should eat whatever mom and dad are eating, and we started with stalks of broccoli. Granted there are a few things you want to watch out for, like excessive salt and sugar both can be harmful to baby in large quantities. Also since you’re not sitting there spoon feeding baby, you are able to enjoy your meal while it’s hot and so is the child.

A big concern of mine was the choking hazard and the authors do a phenomenal job of explaining what can occur, what is normal and when to worry. The item that stuck with me the most was that choking or gagging from BLW is no more common (provided the baby is sitting upright) than being spoon fed and in some instances may even be less likely because the baby controls the amount and speed of the foods going into their mouths.

They remind you that gagging isn’t necessarily a bad thing because it is the movement that the baby makes to push the food forward in their mouths, so that it doesn’t go down their throat too soon or in too large of pieces. So essentially, gagging is a good thing!! They obviously go into much more detail but after reading it once and then going back through and reviewing it, I felt confident that Emmett would be just fine eating this way.

BLW allows the baby to be in control of what they’re eating, how much they put into their mouths and how quickly they eat. It essentially teaches babies how to successfully eat without any adult intervention; it gives them the independence to make their own decisions which often leads to babies enjoying their food more and being less picky eaters.

The book does go into detail on how to get the ball rolling with BLW. It explains that putting baby in his/her high chair before he/she even starts eating helps lead to success because it allows baby to feel like they are a part of the action. Mom and dad can eat their meal and baby is in the high chair playing with a cup, bowl or spoon, getting used to meal time.

The book makes it very clear that it is important that baby continue to get most of their calories from breastmilk and formula, which means they should not be eating solid foods when they are starving. In the beginning with Emmett, I’d feed him 20 minutes before we’d eat dinner and then when we put him in his high chair he was satiated and ready to explore the solids that we put in front of him.

I think what I liked most about the book is that every possible question I had about BLW was answered. The authors do a phenomenal job of ensuring that they cover every aspect of eating. They take time to remind you that it is a messy process, that if you are an individual who does not like messes, then BLW is not for you or that you need to allow baby plenty of time to explore and play with their foods, especially in the beginning. BLW is not a process that moves quickly, there are times when you maybe be sitting there with baby for 45 minutes to an hour, while they just palm the food back and forth. BUT it is imperative that you not rush your baby, you should allow him/her to enjoy every second of meal time.

There is also an entire chapter on what foods they recommend giving first. Through the entire book the authors explain that since you are waiting to give your baby solid foods until 6 months, it is unlikely that you will encounter any allergies unless you have a family history and they also state that you typically will not need to wait several days between each new food you give baby because your baby’s digestive system is advanced enough to handle new foods. Of course you want to make sure that you move as quickly or slowly with new foods as you are comfortable and they also suggest you check with your baby’s doctor before beginning BLW.

The benefits of feeding a child this way are endless and I am so pleased that Seamus was willing to go along with feeding Emmett this way. I have struggled with emotional eating and had issues with food my entire life and I do not want Emmett to have to suffer through that. My hope is that by introducing food in this way, he will have a love of food that leads to eating to live, not living to eat. I have and will continue to recommend this method of eating to any new parent who will be introducing solids soon. It really is just common sense, to me.
