Happy Monday, everyone! It’s time again for my Sunday Meal Plan link-up.
After a lovely weekend, where we spent so much time outdoors, I’m not quite ready for the work week to begin. I know I’m not alone in wishing that weekends were 5 days, and work weeks were 2. Ha! Wishful thinking, right!?
I’m also super excited because when my sister came up to visit yesterday, she brought my grandmother’s old table (which is in pristine shape). It’s nothing fancy, but it’s new to us and fits perfectly in the space we have. Plus, it’s a wee bit higher than our previous table so working on it, is really nice (I’m actually working at it RIGHT NOW!) 🙂
Anyhoo – without further ado, my weekly Meal Plan
I want to preface this by saying, that we made the meal plan last minute so it’s nothing fancy. But the part I am most proud of, is that we meal planned at all! In the past, whenever we had any sort of excuse to get out of meal planning or shopping (like a holiday), we’d use it. Not any more! We’re growing up!! LOL
Sunday: Scrounge (since we went to a Easter brunch buffet, we knew we wouldn’t be very hungry for a formal dinner)
Monday: Hamburgers and fries
Tuesday: Grilled chicken and zucchini
Wednesday: Tacos!! (This makes me so happy, sometimes it’s really tough to get Seamus to agree to tacos)
Thursday: Pork Carnitas with Fresh Veggies
Friday: Grilled Pork Loin and Cauliflower
Saturday: Redlinski’s Sausage and Saurkraut
See, like I said, nothing fancy but everything is gluten-free and we’re not going out. Sometimes, that’s all that matters!

I’ve been eating out too much this week so I really look forward to eating healthy the next several days! I haven’t made tacos in so long…I need to stock up on ingredients!
Hi Janelle! I love when I get really focused and eat healthy. My body feels great and I have a lot more energy. It’s just so hard to remember that when I’m craving junk!
