Check out my gluten-free Wednesday!
Happy Wednesday! It has been a fantastic week, despite my herniated disc issues, I’ve just had such a positive feeling all week. Work is busy but I’m feeling so good about things, like I’m slowly but surely getting a handle on things. It’s a good feeling, one I hope will continue.
This past Sunday, I talked about how I am going gluten-free in an effort to help with the inflammation of the discs in my back. Well, my back seems to be very slowly getting better, the pain is still terribly intense, but the stabbing pain is coming on less and less frequently. I don’t know whether it’s the stretches I’ve been doing, going gluten-free, or a combination of both, but I am thrilled that things seem to be working.
So without further ado, here is my gluten-free What I Ate Wednesday
I didn’t get a picture of it but breakfast was an Udi’s bagel with egg and cheese. Udi’s may not necessarily be considered whole food, but goodness are their everything bagels are delicious and are gluten-free!
My snack recently has been strawberries, blueberries and some unsweetened coconut sprinkled on top. However, when I was shopping I saw some gluten-free granola that looked good, so I grabbed some and I am in love! It’s called Purely Elizabeth, and I am really excited to share this find with you, because it so darn good. I bought the Cranberry Pecan version, and I can truly attest that on top of berries, it was to die for.
For lunch, I had chicken sausage, saurkraut, a hard boiled egg, and tomato/spinach salad with balsamic vinegar and oil. Yummilicious!
My afternoon snack was an apple and green olives stuffed with garlic. I also forgot to take a picture of this, sorry about that!
Dinner, oh my goodness dinner! It was so so so so so good! We made steak with chickpea, tomato and feta salad and it was delicious. Seamus broke out the grill for the first time this year, and man was it worth it. I am rarely a huge fan of red meat but this was mouth watering. The chickpea salad was also perfection! We toasted the chickpeas, but left the tomatoes and cilantro cold. My advice is to make this tomorrow!
My evening snack was a couple pieces of delicious dark chocolate from Trader Joe’s. Yum!
So, I am three days into being gluten-free and honestly, I don’t miss gluten much at all. There are moments when I miss it more than others, but overall I have chosen some great food that keeps the bread cravings at bay.
